Easy week night dinner idea – Creamy Rosé Sauce

Sometimes cooking a whole food, plant-based meal can seem intimidating if you don’t know how or you are not use to cooking only plant-based meals.

Vegan dinners don’t need to be fancy and complicated, or on the other hand, it doesn’t need to be just a bowl of leaves and cucumber.

This is one of my go-to sauces. It is so so easy to make, and it is so versatile. It doesn’t need any fancy ingredients and can be whipped up in about 30 – 35 minutes.

Once the sauce is done, you can add it to some rice spaghetti or pasta, add some of your favourite veggies and even some baked tofu.

Or just add it to a big veggie stir-fry for some creaminess. Place on a bed of rice or even some zucchini noodles.

This sauce can also be used as a juicy layer in a lasagna, or even as the base for a creamy quinoa “risotto”.

I usually make a double batch and store it in the fridge to have ready to just heat up on busy week nights.

 

Here is how to make it:

4 cloves garlic

½ onion

170g tomato paste

240g canned tomato

½ cup fresh basil leaves

¾ head of cauliflower

½ cup soaked cashews

Salt

Pepper

Smoked paprika

  1. Soak your cashews in some boiling water. (anything from 30 minutes to 3 hours. The longer the better. )
  2. Sauté garlic and onion in a pan with a splash of water. Add the tomato paste and canned tomatoes and cook this with some salt, pepper and paprika. (add some red wine if you have some)
  3. While the tomato sauce is cooking, cut up the cauliflower and steam in pot until cooked.
  4. Once the tomato sauce is cooked nicely and the cauliflower is done, set both aside to cool down for a little while.
  5. Once cooled, add the tomato sauce, cauliflower, cashews and basil leaves in a blender and blitz until smooth and creamy.
  6. Serve with spaghetti, pasta or with a stir fry.
  7. Garnish with fresh basil and if you want, some nutritional yeast for a cheezy flavor.

It is that easy! This creamy nutrient dense sauce is a winner for any meal. Kiddies will also love it, and knowing that they are getting in some sneaky veggies is a bonus!
